Buffalo meat is a game meat I truly enjoy. It's taste is akin to beef but not as heavy and makes a wonderful alternative. It is high in protein and very low in fat, calories and cholesterol unlike its beef counterpart. Because of such, it cooks very quickly. That is very practical for getting these burgers to the table on a weeknight. My buffalo burger is filled with sauteed onion, garlic and jalapeno pepper, coated in a wonderful southwestern spice rub and topped with melted cheddar cheese to bring big, bold flavors to the party. These burgers are perfect for your indoor grill pan or in the summer at the barbecue for something different and delicious. I hope you enjoy.
Boulder Creek Barbecued Buffalo Burgers
Ingredients:
2 Tbsp. onion, diced
1/2 jalapeno pepper, diced
2 cloves garlic, minced
1/4 tsp. ground allspice
2 tsp. chili powder
1/4 tsp. ground cinnamon
1/2 tsp. garlic powder
1 tsp. paprika
1/4 tsp. black pepper
1 tsp. Splenda
1/2 tsp. molasses
1 tsp. dried cilantro
1 lb. ground buffalo meat
2 ounces cheddar cheese, slices or shredded
vegetable spray
Preheat saute pan on medium high heat and coat with vegetable spray. Saute the onion, jalapeno and garlic until tender and caramelized. Set aside to cool.
While the mixture is cooling prepare the spice rub by blending the rest of the ingredients (except the buffalo) in a bowl. Work the molasses in well.
Place the buffalo meat in a large bowl and add the cooled onion mixture. Gently fold in to mix. Form four burger patties. Pour the spice rub on a plate and evenly coat each burger on both sides. Gently shake off any excess. This makes enough for the four burgers.
Preheat grill pan on high heat and coat with vegetable spray if necessary. Place the burgers in the pan and saute on the first side for about 4 or 5 minutes on the first side. Flip, divide the cheese onto the burgers and continue to cook for about 3 or 4 additional minutes. It cooks very quickly so be careful not to over cook the burgers.
