Creamy Roasted Green Chile Soup

If you are a fan of green chilies and the wonderful heat they produce then you are going to love this recipe. I have taken a variety of green chilies, roasted them for even more flavor and tempered the heat with a bit of heavy cream. The result is a delicious and very flavorful soup. You can decide the level of heat that you and your family will enjoy also. Simple to make and a great starter for dinner or a light lunch on a cold day, this soup will please the entire family. Creamy Roasted Green Chile Soup

Ingredients:

1 to 3 jalapeno peppers
3 pablano peppers
2 cubanelle or anaheim peppers
1 Tbsp. unsalted butter
3/4 cup red onion, diced
3 cloves garlic, minced
2 cups water
6 cups low sodium chicken stock
1 cup cilantro, rough chopped
1 medium Haas avocado, cubed
1 cup heavy cream

Preheat broiler

Place the chilies on the broiler tray and blacken under the heat source, turning so that all sides are done. Remove and place into a large bowl, cover with plastic wrap and set aside for about 10 minutes or so. When the peppers have cooled enough to handle peel off the outer skin, slice open and remove the seeds, ribs and stems. Rough chop the chilies.

Melt the butter in a large soup pot or dutch oven and add the onions, garlic and chopped chilies. Cook on medium until the onions are translucent. Add the water, chicken stock, cilantro and diced avocado. Bring to a simmer, reduce heat and partially cover. Simmer for about 1 hour, stirring occasionally.
Carefully ladle soup into a blender, only filling about 1/3 of the way. Remove the insert in the cover and place on blender. Cover the open space with a clean kitchen towel and puree until smooth. Do this in small batches and return to a clean pot.

Stir in the heavy cream and bring soup back to a light simmer. Cook for a few minutes, stirring so the cream does not break, until well heated.
