Shrimp in Sherried Garlic Tomato Sauce

This is an elegant but simple to prepare meal that is so good your family will think you spent hours over a hot stove. The succulent flavor of shrimp bathed in the distinctive flavor of sherried garlic tomato sauce give this glorious seafood dish an unexpected fresh and lively taste that is perfect for your guests at any dinner party or celebration. A side dish of about 2/3 cup pasta and a 2 cup portion side salad will round out this meal if you like to 3 protein exchanges, 3 carbohydrate exchanges, 2 vegetable exchanges and 3 fat exchanges. Just save your fat exchanges during the day so you can splurge for this great dish without going over.
Shrimp in Sherried Garlic Tomato Sauce
Ingredients:
8 ounces uncooked large shrimp, peeled and devained
1 tsp. cornstarch
1/4 cup dry Sherry
1/4 tsp. white pepper
1 - 14.5 ounce can whole tomatoes, no salt added
6 large garlic cloves, thinly sliced
2 Tbsp. fresh parsley, chopped
2 Tbsp. Parmesan cheese, grated
2 Tbsp. olive oil
black pepper to taste
Blend the cornstarch with 2 tablespoons of the dry sherry and the white pepper. Coat the shrimp with this mixture and marinade, covered and refrigerated, for about 10 to 15 minutes.
In the meantime, pour the canned tomatoes into a food processor or blender and pulse until smooth. Pour through strainer to remove any seeds. Set aside.
Preheat a large saute pan on medium high heat and add the olive oil. Lightly brown about one garlic cloves worth of slices to flavor the oil, remove and set aside. Remove the shrimp from the marinade and let the excess drip off before placing in the garlic oil. Cook shrimp for about 90 seconds on each side, until lightly browned. Remove and set aside. Pour the strained tomatoes into the saute pan and bring to a gentle simmer and reduce heat. Add the rest of the raw garlic and sherry. Season to taste with black pepper and simmer for about 15 minutes. The sauce will reduce and thicken slightly after about 15 minutes. Stir in the parsley and grated cheese and add shrimp back on top of mixture to reheat for about 10 seconds or so. Serve with pasta if desired and garnish with the browned garlic chips.

Chicken in Spicy Tomato Sauce

Tonight let's make something simple that every family member will enjoy. This Tex-Mex style chicken dish will warm you with a little heat and satisfy even the most finicky eater in your house. A family favorite in my home, I am sure it will soon become one in yours.
Chicken in Spicy Tomato Sauce
Ingredients:
4 - 4 ounce boneless skinless chicken breasts
1 - 14.5 ounce can low sodium diced tomatoes
1/2 cup chicken stock
1/2 cup fresh orange juice
2 Tbsp. chili powder
2 Tbsp. fresh lime juice, about 1 lime
3 large garlic cloves, rough chopped
2 tsp. oregano
1 Tbsp. brown sugar, not packed
1/2 tsp. cumin
vegetable spray
Place all of the ingredients listed after the chicken breast into a blender and pulse to start. Switch to a higher speed and blend the ingredients well. Set aside.
Lightly coat a large saute pan with vegetable spray and warm on medium high heat and brown the chicken on both sides. Add the sauce and simmer until the chicken is completely cooked, about 10 to 15 minutes. Remove chicken, slice and set aside. Continue simmering sauce until thickened. Return chicken strips to sauce to heat. Yields four servings.
Serve with simple white rice to enjoy the sauce (2/3 cup serving = 30 grams carbohydrate or 2 carbohydrate exchanges) or wrap in low carb tortillas and don't forget a side salad. (2 cups raw vegetables = 2 vegetable exchanges)

New Low Carb Product

I just wanted tell you about a new product I found in the supermarket today that is really low in carbohydrates and very delicious! There's one thing I love to have and just won't give up. I have resigned myself to having to eat much less of it to stay within the bounds of my carb exchanges....pasta. Who doesn't like pasta? Well, on those crazy nights when there is no time to make your own sauce, I too grab for a jar of pasta sauce. They are normally loaded with carbs though. I have seen anywhere from 12 to 18 grams of carbs in one half cup serving. That means that I have to reduce the amount of pasta I am eating by one third of a cup! That really shrinks a portion! Well, I found a sauce put out by the amazing Italian chef, Mario Batali. The sauce is made with all fresh ingredients and has only 6 grams of carbs in a one half cup serving! That is truly a terrific accomplishment! The taste is awesome; fresh and clean. The only drawback is the price. It is a little more pricey than the regular jarred sauces. I just tell myself that since I eat so little of it, it's okay because it will last a long time and then I freeze what's leftover in small single or double portion containers to use later. I think that the sauce is worth it and just wanted to let you know. One last thing....new recipes are on the horizon and coming this weekend, so look for them!
