Crispy Roasted Radicchio with Parmigiano Reggiano Cheese

This is one of the simplest side dishes you can make and it goes with a wide variety of main courses. The simple radicchio is not just for salads and oven roasting it brings out the wonderful, slightly bitter taste of it. Add olive oil, sherry vinegar and real parmigiano reggiano cheese and you have a home run. Simple, elegant and delicious. The sherry vinegar brings out a sweetness that plays off of the bitter radicchio and salty cheese. A wonderful combination of flavors on the palate. I hope you enjoy.

Crispy Roasted Radicchio with Parmigiano Reggiano Cheese


1 medium head of radicchio, about 6 ounces, cut into quarters
4 tsp. olive oil
4 tsp. sherry vinegar
8 tsp. parmigiano reggiano cheese, grated
black pepper

Preheat oven to 400'

Place radicchio wedges on a sheet pan and drizzle each with 1 teaspoon of the olive oil and sherry vinegar. Sprinkle each wedge with 1 teaspoon of the parmigiano reggiano cheese and season to taste with black pepper. Roast for about 15 to 20 minutes or until caramelized, crispy and tender, turning a few times while cooking so that each side is crispy. Sprinkle the wedges with remaining parmigiano reggiano cheese when the radicchio is removed from the oven and is still hot.
