Grilled Chicken Skewers in the Bhindi Bahji Style

Indian food ... spicy and delicious. I took a classic Indian recipe called Bhindi Bahji and turned it on its head. It is a wonderful recipe for okra that is spicy and quite tasty. Using many of the same ingredients I decided to change this into a marinade for chicken and skewer it and grill it off instead. Feel free to serve this dish with okra as a side dish to compliment it if you like or whatever vegetable you prefer. This is a very simple recipe that requires little work and is perfect for the summer. I hope you enjoy.

Grilled Chicken Skewers in the Bhindi Bahji Style

Ingredients:

1 lb. boneless skinless chicken breast, trimmed of any fat and cut into large cubes
6 ounces Greek yogurt
1 1/2 tsp. coriander
2 tsp. cumin
1 Tbsp. curry
1 tsp. turmeric
2 tsp. garlic, minced
2 tsp. ginger root, grated
2 Tbsp. cilantro, rough chopped
1 lime, juiced
vegetable spray

Place the chicken into a large zip top bag or other vessel for marinating. Blend the yogurt and the rest of the ingredients and pour into bag with chicken. Gently shake bag and make sure all of the pieces are thoroughly coated. Place the zip top bag in a dish in case the bag should leak and put on a lower shelf in the refrigerator t marinate overnight. Turn bag occasionally to distribute the marinade evenly.

About 30 minutes before grilling the chicken place several wooden skewers into a dish with water and soak them. Soaking them for about a half hour will help prevent them from burning when you place them on the grill or in your grill pan. 

To cook in a cast iron grill pan, preheat pan on high until smoking hot. Lightly coat with vegetable spray. Arrange a few skewers at a time in pan and cook for 3 to 5 minutes per side, turning with tongs. If cooking on an outdoor grill arrange the skewers along the edge so that the chicken is on the grate and the wooden skewer is on the edges or place a sheet of aluminum foil under the exposed part of the wooden skewers so they do not burn. Cook about the same amount of time on each side.
