Summer Berry Smoothie

A great tasting and satisfying breakfast awaits. This is terrific if you are on the run as it is both quick and easy to prepare and it's portable.

Summer Berry Smoothie

1 cup low fat milk
1 cup frozen summer berries (any combination of strawberries, blackberries, raspberries)
1/2 of a 6 ounce container Greek Yogurt (Fage brand for example)
2 tsp. honey
Place all ingredients into a blender and pulse to break up fruit. Run on high until thick and smooth.

Yields 1 serving = 3 carbohydrate exchanges, 1 protein exchange
Tip...take advantage of the summers best berries while they are plentiful and inexpensive. To freeze them, wash berries under cool running water and pick out any stems and leaves. Dry thoroughly then place berries in a single layer on a cookie sheet and freeze for about one hour. After an hour, remove berries from cookie sheet and place in a zipper food storage bag. The berries will remain individually frozen for easy use.
