Vanilla French Toast with Strawberry Sauce

Well, I can't believe that half the week is gone already. I'm up early and I am starving for something really good and sweet. Here's a great way to start your day.

A sumptuous and filling breakfast when time is not a luxury consisting of two slices of Vanilla French Toast with Strawberry Sauce that contains a total of 345 calories, 3 carbohydrate exchanges, 1 protein exchange and 1 fat exchange.


Vanilla French Toast

Ingredients:
1 tsp. unsalted butter
1 egg or 1/4 cup egg whites
2 Tbsp. sugar free, non-dairy French Vanilla Coffee Creamer
1/4 tsp. vanilla
few grains salt
2 slices white bread

Beat egg lightly with sugar free French Vanilla coffee creamer, vanilla and a few grains of salt. Dip the bread in mixture on both sides until all of the egg is absorbed by bread. Place a saute pan over medium-low heat and melt the butter. Place both slices of bread in saute pan and cook until golden brown on each side. Serve with Strawberry Sauce.

Yields one serving = 310 calories, 2 carbohydrate exchanges, 1 protein exchange, 1 fat exchange.

Strawberry Sauce

Ingredients:
1 1/4 cup strawberries, hulled and halved
1/4 cup Splenda
1/4 cup water
2 Tbsp. sugar free strawberry preserves
1/2 tsp. lemon juice

Place the strawberries, Splenda and water in a small sauce pan on medium heat and bring to a simmer. Reduce heat to low and add the sugar free strawberry preserves. Stir to blend. Continue to cook, stirring frequently, for about five minutes or until some of the strawberries have broken down and the mixture has reduced and thickened a little. Stir in the lemon juice and serve warm.

Store unused sauce refrigerated, in an airtight container for up to three days.
Yields two servings = 35 calories, 1 carbohydrate exchange
